Chicken with Fried Coconut Flakes (Ayam Serundeng Kelapa)

Chicken with Fried Coconut Flakes is a traditional cuisine originated from Indonesia that consists of fried chicken mixed with fried coconut flakes. Fried coconut flakes is made of fried grated coconut flesh and galangal.

Ingredients:

½ kg Chicken
1 pack Grated coconut
1 small segment Galangal
1 Lemongrass
2 Bay leaves
Sufficient amount of salt
Chicken seasoning:
1 segment Turmeric
3 cloves Red onion
2 cloves Garlic
Sufficient amount of salt
Sufficient amount of ground pepper

Directions:

  1. Wash the chicken before cooking it. Stir fry the seasoning till fragrant. Add small amount of water and cook the chicken with the seasoning.
  2. Roast the grated coconut and galangal until it turns slightly golden in colour. Add salt and granulated sugar, then stir well.
  3. Fry the seasoned chicken and drain it from the oil. Put the fried chicken into the roasted grated coconut and galangal.
  4. Chicken with fried coconut flakes is ready to be served.
